I have a can of that Creamed Possum in my cabinet. A friend of mine would sell these cans at fairs and festivals. He printed up the labels, and applied it over a can of beans or corn as a gag item to sell.

Just to let you know, the gelatin that you find in most canned goods is not added, but an actual by product of the canning process. The meat is cooked in the can (seldom precooked) and the gelatin you see is produced from the product itself. This is similar to the gelatin you purchase at the grocers. Don't believe me? Cook up a roast or ham (not a canned one) then let the juices cool. You can separate them and place them in the fridge. When cooled, you'll have made your own Jell-O. Now all you need to do is add the fruit flavors and place in a gelatin mold. This has been done for centuries, and why gelatin had once been the pleasure of only the rich.

Jillian, a world-traveller with a gourmand palate you are not, as is obvious by your choices of relatively benign foods. What's ironically funny is how we tend to use gelatin in so many of our canned (and otherwise) food products. "The production of gelatin starts with the boiling of bones, skins, and hides of cows and pigs, a process that releases the protein-rich collagen from animal tissues. The collagen is boiled and filtered numerous times, dried, and ground to a powder. Because the collagen is processed extensively, the final product is not categorized as a meat or animal product by the federal government." Haha. Joke's on us- or, we're the weirdos.
